Hi! I’m Lindsey.
I believe its possible to cook delicious food quickly and healthy as well.
If you’re anything like me, dinner doesn’t always go according to plan.
Some nights you’ve got everything prepped and ready to go… and other nights it’s 5:30, the meat is still frozen, and you’re standing in the kitchen hoping the Instant Pot can bail you out again.
That’s exactly why I started Cozy Instant Kitchen.
I didn’t start this site to create fancy recipes or impress anyone. I started it because I wanted simple, reliable meals that actually work in real life, especially on the nights when you don’t have time, energy, or a plan.
Why I Focus on the Instant Pot
For me, the Instant Pot wasn’t about trends, it was about solving a problem.
I was tired of:
- Forgetting to thaw meat
- Overcomplicating dinners
- Spending too much time figuring out what to cook
Once I started using the Instant Pot regularly, things got a lot easier. I could take basic ingredients, even frozen ones and turn them into something solid without babysitting the stove.
Most of the recipes you’ll find here are built around that idea:
Making the inputs simple, getting consistent results with minimal effort
What You’ll Find Here
Every recipe on this site is designed to be:
- Practical – Ingredients you can actually find at the store
- Repeatable – No guesswork once you’ve made it once
- Flexible – Works even if you’re missing something
- Real-life tested – Not just written to sound good
I’m not trying to reinvent cooking here. I’m just trying to make it easier.
A More Realistic Approach to Cooking
I’ll be honest, most nights I’m not cooking from scratch with a perfectly planned menu.
A lot of these recipes come from moments like:
- realizing I forgot to thaw dinner
- needing to feed people quickly without takeout
- wanting something filling without spending all evening cooking
That’s the lens everything on this site is built through.
You’ll also see me mention things like:
- what actually matters vs what you can skip
- where recipes tend to go wrong
- how to adjust things at the end so it tastes right
Because those are the things that actually make a difference.
Who This Site Is For
This site is for people who want:
- Easy meals without overthinking it
- Reliable results without complicated steps
- Comfort food that fits into a busy schedule
If that sounds like you, you’re in the right place.
About Me
My name is Lindsey, and I’m the person behind Cozy Instant Kitchen.
I’m not a professional chef, just a stay at home mom who got tired of making dinner harder than it needed to be.
Over time, I’ve tested a lot of different approaches, figured out what actually works, and built this site around those ideas.
If a recipe is here, it’s because it’s something I’d actually make again.
Thanks for being here.
— Lindsey
